new member and new to canoeing

Hello,
I’m Johny and live in Belgium (Europe)
we would like to start canoeing so after a few rents we picked up this canoe.

Its fully fiberglass so any repair would be easy.
My question is: what gear do I need to start up? except from the canoe and the padlle it is?
we will be canoeing with 2 grownups (me and my gfriend) and one toddler age 2,5.

and if i want to mod the canoe, what should i do.
+ PO had a fin added on bottom, i know this will not allow me to paddle is shallow water but will it affect stability if i delete it?

the most part of our time on water will be very still water since we don’t have much of wildwater over here.

I have one paddle but should i buy a second? and what should i look for when i buy one, materials etc (or can i make one myself and what kind of wood do i need for it?)
